Haystack Casserole is a unique dinner that's full of fun. This ground beef and rice recipe is made with taco ingredients and Saltine crackers. Feel free to adjust the toppings to your liking. This is rather interesting. I had never come across this sort of layered dish before, but it looks yummy. It's sort of reminiscent of a seven-layer dip, though I'd be looking for a layer of guacamole in there. I do like the idea of the corrals to allow for different toppings. In my case, since my wife loves olives and I don't, I'd put olives on half and put sliced jalapenos on my half, since she's not a fan of those.

What a neat take on Mexican dishes that your family will love. I really like the use of crackers in this casserole. My kids are always saying, "Mom, I'm hungry," about an hour after dinner, so an evening snack is almost always guaranteed, but we may not need it with this dish. The kids might get full enough to say, "I'm stuffed."
