Potluck Recipes with Potatoes
Potato casseroles are fun, easy, and oh-so-yummy dishes to bring to a potluck. The "Potluck Recipes with Potatoes" chapter of this eCookbook, 14 Easy Recipes for Potato Casseroles, features four easy and addicting side dishes. These potato casserole recipes make enough for eight people, so share with your eight favorite friends and family.
Fairly Fast Fresno Potatoes (p. 7, pictured) is a good recipe to start with. This dish may remind you of a baked potato because it contains Cheddar cheese, bacon, green onions, and sour cream. Panko breadcrumbs are sprinkled on the top to add a crispiness to an otherwise creamy dish.
Crunchy Cheddar Onion Potato Bake (p. 6). If you're a garlic-lover, then you will definitely want to give this easy casserole a try. The potatoes are first mixed with garlic and butter, so they're nice and flavorful. French-fried onions form the top layer, which gives a satisfying crunch to every bite. Yummy, right?
French Potato Casserole (p.8) This is a creamy and hearty side dish that doesn't come up short on flavor. Bacon and caramelized onions bring wonderful flavors that complement each other and make the potatoes irresistible.
Recipes for Potato Side Dishes
What takes simple recipes for potatoes and turns them into extra special dishes? The answer, my friends, is cheese. This chapter, Recipes for Potato Side Dishes, contains four great potato casseroles that are, indeed, cheesy. Do you like Cheddar, Monterey Jack, Parmesan, Swiss, and Gruyere? You probably like at least one of these cheeses, if not all, so these recipes won't disappoint.
Chantilly Potatoes (p. 10, pictured) It uses only four ingredients, and half of them are cheese. Swiss and Parmesan are the cheeses of choice in this mashed potato casserole.
Cheesy Au Gratin Potatoes (p.11) This one uses three types of cheese! Thinly sliced potatoes are mixed with the cheese, along with chicken broth and cream. A crunchy, golden-brown crust tops it all off.
Gruyere and Rosemary Potato Gratin (p. 12) This one takes a little more time to prepare, but it's worth it. The creamy potato filling has a subtle rosemary flavor that's absolutely wonderful and panko bread crumbs play a terrific supporting role as the crunchy, golden crust.
Loaded Potato Recipes
When a waiter or waitress asks you, "would you like everything on that?" and you say "yes," then you are going to fall in love with these two casseroles.
Cheesy Loaded Twice Baked Potato Casserole (p. 14, pictured above) Sounds heavenly, doesn't it? Bacon, green onion, sour cream, and Cheddar cheese - your favorite baked potato toppings - team up again in this casserole. Serve it along a big, juicy steak or as an appetizer while the big game is on. It works for either occasion.
Hubby's Bacon Ranch Potatoes (p.15, pictured) Ranch dressing mix, crispy bacon, and Cheddar cheese help make this one outrageously good potato casserole. You really won't be able to stop eating it. This, too, is a fun recipe to make for game day or any kind of party.
Tater Tots and Hash Brown Casseroles
As you may have noticed, the previous recipes were all potato side dishes. Now, we come to a chapter with main dishes and breakfast.
Cheesy Tater Tot Chicken Casserole (p. 16). This kid-friendly recipe is a nice weeknight meal that's simple to prepare and allows you to tackle other important things while it's baking for 45 minutes. Kids will love the tater tots and you'll love that they're eating their veggies.
Creamy and Crispy Hash Brown Casserole (p. 17, pictured) makes an excellent breakfast. Like it's name implies, it's crispy on the outside and creamy on the inside, thanks in part to hash browns and potato soup. You can add veggies or beans for added flavor and nutrition, or eat as is. Either way, you have a delicious and healthy breakfast.
