I love how simple this is to prepare, plus the fact that you don't have to pre-cook the pasta before assembling everything. I usually add corn to the Mexican recipes I make, and beans as well depending on my mood. Beans could easily be added to this recipe if desired. I normally add some diced green and red pepper, or a can of Mexican-style corn.

I like that you added corn to this recipe. Most of the dishes like this only use the tomatoes and never add the corn. I like to fry my corn in the skillet in a little butter or olive oil and then put it in the dish to add another level of flavor. Do you ever roast or saute the veggies you put in your casseroles?

#BestIdeaEver My mother used to make a dish similar to this one when I was growing up. I will definitely have to try it. Might bring back memories.
