This Meat and potato dish is a nice and hearty meal for a cold winter night. Add some warm crusty bread with fresh butter and you have a dinner to remember. I made up a couple batches and tossed one in the freezer. Easy to grab in the morning and place in the oven frozen set on the timer to cook prior to coming home. Enter the house tired to the wonderful smell of dinner ready.

I love that you showed directions for frozen veggies because most recipes do not include the instructions for these variations. I think I might even add some ripped spinach leaves to give it some more color and a little vitamin boost at the same time. With the healthy options you listed, anyone can make this a healthy dish.
