Another favorite casserole! I've made another version of this using a layer of crushed corn chips on the bottom instead of cornbread...if you're REALLY pressed for time! It's also a great way to use leftover chicken. I dice a couple of cold, cooked chicken breasts and use that instead of ground beef...it eliminates the cooking step for the meat. And if I don't have enchilada sauce, I use a jar of salsa. We like sour cream with this. Avocadoes sound delicious!

This 'Cowboy Beef Tamale Casserole' is really up my alley! Anything with cornbread is something I will give a go. There is just something so homey and comforting in cornbread. I like it as a savory and my husband likes it as a dessert! (What can I say, he is British.) Just a question, though. I cant find chipotle powder in the supermarkets here, so can you recommend something as a substitute?
