The original John Wayne Casserole was a crustless, vegetarian dish that was mainly composed of eggs and cheese.

John Wayne Casserole was further popularized by the University of Mississippi Medical Center cafeteria in Jackson, Mississippi. Much like the famous actor, the Southwestern-flavored casserole was nicknamed "the Duke”. Unlike the original cookbook version, the hospital cafeteria’s recipe evolved to include ground beef and a crust.
