I have seen several versions of this recipe on here, but this is the first one that used cheese on top of the cornbread. We love a good sloppy joe sandwich with a slice or some shreds of sharp cheddar cheese. The tomatoey goodness with the sour from the sharp cheddar just make this dish so much more special. The best part is that you can throw this meal in the oven and get on with the things that are keeping you busy.
