This amazing casserole for two will satisfy even the hungriest cowboy. Simply brown some ground beef, stir in the soup, and layer the corn and tater tots, and you're on your way to an easy meal.   • 1/2 pound ground beef (80/20)
  • 1/2 small onion, chopped
  • 1 clove garlic, minced
  • 1 (8-3/4-ounce) whole kernel corn, drained
  • 2/3 cup cream of mushroom soup, undiluted
  • 1/2 cup shredded Cheddar cheese, divided
  • 1/3 cup milk
  • 2 tablespoons sour cream
  • 1/4 teaspoon black pepper
  • 2 cups frozen tater tots


  1. Heat oven to 375 degrees F. Lightly grease an 8 x 8-inch baking dish.

  2. In a skillet, cook onion until tender. Add garlic and cook 1 minute. Add the ground beef and cook until no pink remains. Stir in the corn, soup, ¼ cup cheese, milk, sour cream, and pepper.

  3. Place 1 cup Tater Tots into the baking dish. Add the beef mixture over the Tater Tots. Add the other 1 cup Tater Tots over the beef and then sprinkle the remaining cheese over the Tater Tots.

  4. Bake 20 to 25 minutes until golden and cheese has melted.
