This Meat and Potatoes Bake is a tasty one-pot meal. It has oven-baked chicken, potatoes, and green beans in a flavorful, buttery sauce. It's really a simple dish because it only takes five ingredients to make. The secret to this dish is that you use a packet of Italian dressing mix to spice everything up. You won't believe that so much flavor can come from an easy recipe like this! It's also great to customize. You can use different types of potatoes or you can swap out green beans for your favorite veggie. The recipe also includes optional add-ins for even more flavor.

To prepare ahead of time: The recipe can be assembled up to 8 hours ahead; cover with plastic wrap and refrigerate, then bring to room temperature before baking.



 

Ingredients

  • 2 pounds boneless, skinless chicken breasts (3 large)
  • 1 pound fresh green beans, trimmed and left whole
  • 1 1/2 pound new red potatoes or small Yukon potatoes
  • 4 tablespoons butter
  • 1 packet Italian dressing seasoning mix

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9 x 13-inch casserole dish with cooking spray.

  2. Cut the chicken breasts in half lengthwise (or cut into 1 1/2-inch cubes) and arrange down one long side of the casserole dish. Line up the beans down the center of the pan. Cut the potatoes in half (or into smaller pieces if they are larger than 2 inches), and lay them down the length of the pan in the remaining space.

  3. Arrange the butter over the contents, with most of it on top of the chicken and potatoes. Sprinkle the seasoning mix over the entire dish. Cover the dish with foil and bake for 1 hour. Check to see that the potatoes are tender; if not, remove the foil and bake for an additional 15 minutes.

I love this recipe and make it often. I use only chicken/turkey snd am now alone. It's used for the taste but also because I can easily cook for 1. something that is NOT offered in most recipes. Thaks for posting this one.

This sounds so good and easy to make, but I have a problem. Even though I love fresh green beans I'm not allowed to eat them. Is there something that I replace them with?

Great Recipe. The seasonings really soaked into the potatoes, and they were nice and mushy. Delicious.

This is such a delicious recipe! I love the seasoning used on the chicken and potatoes. I think some of the potatoes were a bit under-cooked, I would probably cook them for longer. I'll definitely try this out for dinner!
