I live right in the center of my city's "Little Mexico" district, and have had Mexican street corn in so many ways. It always starts with toasty grilled sweet corn on a stick, and then there are endless combinations of toppings. Some people like mayonnaise and crumbled queso fresco, while some might roll it in butter and an aged Mexican cheese reminiscent of parmesan. Some people do melted butter, cayenne pepper, and lime juice. You can really be creative with this casserole and make it just how you like your street corn!
