Ingredients
- 4 slices bacon
- 1 (28-ounce) bag frozen O'Brien potatoes with peppers and onion
- 1 can cream of mushroom soup
- 1 1/2 cup milk
- 1 envelope dry Ranch dressing mix
- 2 cups shredded Cheddar cheese, divided
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
- 1/2 cup cracker crumbs (about 1 sleeve Ritz Crackers)
Instructions

Preheat the oven to 350 degrees F. Lightly spray a 9 x 13 baking dish with cooking spray.

Cook bacon until just crisp. Chop and set aside.

Place the potatoes in the baking dish and cover with plastic wrap. Microwave on high for 5 minutes. The potatoes will not be fully cooked.

Combine the soup, milk, and dressing mix. Stir well. Add about half of the cheese and stir. Pour the soup mixture over the partially cooked potatoes and stir.

Sprinkle the dish with the remaining cheese and the reserved bacon. Sprinkle with the crumbs and bake for about 30 minutes until lightly browned and bubbly.

What the heck are "funeral potatoes"? I understand your point, but that's a hell of a way to present yourself. Thinking back to both of my parents funerals, and then my daughter's, the last damn thing I want to think about are the meals served afterwards. Great recipe, but re-screw your head on.

The name of this recipe goes back many years. The community and neighbors would help with the meal after the funeral. Thus, the name. Please educate yourself before being so judgemental.

ok.. I made this for a family of 5.. 3 picky eaters.. but alllll bacon lovers!. Usually I make a recipe the first time specifically staying with the recipe.. to see if there is anything the picky eaters need changed.. the only thing I did different was.. well it calls for half a pound of bacon.. since the pkg was a pound..thats what I used (bacon lovers remember).. I have since been told this will be a regular dish..with steak with roast, with scrambled eggs.. needless to say.. it was a big hit..just depending on the size you cut the potatoes.. 40 minutes check them, so they do not get overdone,,potatoes cooked in 40 min.. giving plenty of time to cook the steak while the topping was melting allll gooey cheese. Great recipe!!

Plan on trying this recipe this weekend. Looks delicous. Has all the toppings I like on baked potatoes except for the ranch dressing mix. That is new to me but willing to try it. Will rate it once I try it.
