Mac and cheese is great on its own, but if you want to make it even better, then try this version. Baked Broccoli Macaroni and Cheese is an easy recipe that you'll want to make over and over again. The addition of broccoli adds nutrition, color, and variety. It's easy to make and easy to eat. If you have kids (or a grown-up kid) at home who don't like to eat their broccoli, this is a good way to get them to eat it. After all, who can resist mac and cheese?

Ingredients

  • 1 pound elbow macaroni, cooked
  • 1 cup milk
  • 1 large egg
  • 3 tablespoons salted butter, melted
  • 2 cups shredded sharp Cheddar cheese, divided
  • 1 1/2 cup shredded Italian blend cheese
  • 1 1/2 cup broccoli, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon dried parsley flakes (optional)

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a large mixing bowl, add the egg and lightly beat it.

  3. Pour in the milk and melted butter. Whisk the ingredients.

  4. Add the pasta, broccoli, 1 cup Cheddar cheese, 1 1/2 cup Italian blend cheese, and seasonings. Fold in all of the ingredients.

  5. Place the macaroni mixture into a large casserole dish, and sprinkle 1 cup of Cheddar cheese on top.

  6. Bake uncovered for 25 to 30 minutes. Let the casserole stand for 5 minutes before serving.
