Easy Taco Stuffed Pepper Recipe is a great recipe for dinner that the whole family will love. This recipe is a healthier version of traditional tacos because the filling is stuffed into bell peppers instead of tortillas. Cooked rice and kidney beans are also added to the filling as well as a sauteed bell pepper and salsa. Once the peppers have been stuffed with the ground beef filling, they are baked in the oven. Enjoy these peppers with sour cream, lime wedges, and salsa for the ultimate meal.

I love both dishes, but to combine them is wild. I am not sure it will be a flavor explosion or a meltdown, but it sounds so good I have to try it and see what the family thinks of it. Do you have a preference on the pepper choice?

This is my new favorite way to make stuffed peppers! The roasted peppers make it sort of taste like a fajita and a taco all in one! Double bonus. I used pinto beans when I made them, since I don't really care for the big kidney ones, but it was great. Black beans or small white beans would be great in this as well. Tortillas can be full of carbs and "hidden" sodium, so this is really a healthier option.

Stuffed Peppers, or Capsicums as we call them, used to be a regular dish on my weekly menu. I havent made it for ages, but seeing this recipe reminded me just how much I used to enjoy it. I must admit I never thought of using Taco seasoning to give it that extra spice. Guess what we are having for dinner tonight?
