In our home we love this kind of food (I can see my Mexican friend raising her eyebrows at that statement, lol!). Actually we love AUTHENTIC Mexican food that is cooked with passion even more but this taco casserole recipe is so easy to do plus it's tasty, filling and perfect for a weekend family dinner!

My family likes tacos and enchiladas, and since this is an easier version of both, I will make this for a quick weeknight meal. We will top this casserole with lettuce, tomatoes, jalapenos, olives, sour cream, and salsa, with tortilla chips and guacamole on the side. I like that I can make a small amount in a small dish, or a doubled amount in a larger pan.
