This healthy Mexican casserole combines protein-rich quinoa with black beans and plenty of vegetables. Cilantro and green onions give this casserole a light, fresh flavor, while coconut milk and coconut oil give it great complexity. This healthy casserole recipe is completely vegetarian, but even meat-eaters won't be disappointed. For a great make-ahead meal, you can freeze individual portions of the casserole.

This is a really interesting mix of ingredients and tastes. It's got a hint of Thai cooking if you use the coconut oil and milk, though substitutes for both are mentioned in the comments. My wife and I will occasionally try vegetarian dishes, but something like this calls out for the addition of a bit of ground beef along with the black beans. Yes, I know it's not as healthy as the original, but we're dyed-in-the-wool carnivores.

I love casseroles, but I have to be careful with the calories. I love that this is a healthier version of a heavy casserole.
