My mom makes these bars without the banana chips and caramel pieces. I want to try it but I will have to leave out the banana because my daughter is allergic, but my favorite cookie bars with the caramel melted on top sounds too delicious to pass up. She only make the bars once a year for my birthday because they are so rich and indulgent.

These have all of my favorite indulgent snack foods all in the same dessert! When I poured the sweetened condensed milk over the graham crust, I was nervous that it might sog it up - but the bottom still stayed fairly crispy. I remember chunky monkey ice cream, although I haven't had it in years, and this really does remind me of it! My son loves these!
