Overnight Cheesy Spinach Strata is a make-ahead breakfast that is loaded with Cheddar, Monterey jack, and Parmesan cheese. If you have a day old loaf of French bread that you're not sure what to do with, this is a great way to use it up. This dish is very simple to prepare since your food processor does most of the work for you. Simply tear the bread into bite-sized pieces and pour the egg mixture over top. Then, let the casserole chill in the refrigerator for four hours or overnight. This casserole will be a wonderful addition to your breakfast or brunch!

Savory breakfast casseroles like this one are my absolute favorite, since they can be enjoyed any time of the day! I can assemble it in the morning while I'm packing school lunches, and pop it in the oven later that evening for a no - fuss weeknight dinner! Some cubed ham would be quite tasty in this too.

I'm going to make one tonight and bake it in the morning. It makes my mouth water just thinking about it. I'll let you know how it turns out.
