There are so many things to love about this Tomato Casserole. It has fresh vegetables, home made croutons, parmesan cheese, and of course, my favorite, it's a one pan wonder. You can add other vegetables to this recipe (zucchini is one of my favorites) and even sprinkle some shredded mozzarella cheese on top. However you make it, this recipe is a sure fire hit.
