This is a great recipe to make when you are craving good Mexican food, but don't want the expense of going to your local Mexican restaurant. I used shredded leftover rotisserie chicken when I made it, as well my own secret sauce, which I make year round using various dried peppers that I grow in my garden and then dehydrate. This way I can really cut the sodium as compared to he canned or jarred variety. I love to top these with crumbled queso fresco right at the end rather than shredded cheese.
