We love gumbo and jambalaya at my house. I've never seen a gumbo casserole, so this is a definite to make for me. I would think I could use refrigerated biscuits instead of cutting up a pastry sheet. I like to serve a cool cucumber salad with my Cajun dishes.

Gumbo and Jambalaya is served with potato salad. Fresh cucumber salad sounds refreshing and lite.. Using refrigerated biscuits should be okay, the only difference is it wont be as flaky as pastry sheets. You might want to buy grand biscuits in the freezer section they are very good and flakey..
