Three Meat Gumbo Casserole is a creative version of the classic chicken gumbo recipe. This Cajun-style stew is served over rice and is packed with chicken, ham and shrimp for a delicious mix of distinct flavors. While preparing gumbo is often difficult and time-consuming, this recipe for gumbo saves time by using canned soup and instant rice, but it tastes just as good as if it were made from scratch. With only 15 minutes of preparation, this would make an ideal dish for a busy weeknight.

Ingredients

  • 2 cans Campbell's Condensed Chicken Gumbo Soup
  • 1 soup can water
  • 1 teaspoon dried minced onion
  • 1/2 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1 cup frozen okra, thawed
  • 3/4 cup uncooked instant white rice
  • 1/2 pound cooked ham, diced
  • 1/2 pound peeled and deveined cooked shrimp

Instructions

  1. Heat the oven to 375 degrees F. Stir the soup, water, onion, Cajun seasoning, garlic powder, okra, rice, ham and shrimp in a 2-quart casserole.

  2. Bake for 35 minutes or until the rice is tender. Stir the soup mixture before serving.
