"Jollof Rice is a popular West African chicken and rice casserole with lots of vegetables and a delicious tomato curry sauce. It’s a great dish for the whole family, full of interesting flavors yet mild enough to be pleasing even to those with more picky palates. Plus, it's a whole healthy balanced meal all cooked in one pot! This casserole quickly became a favorite in my house and is now in the regular rotation. It's a perfect family dinner. Also happens to be naturally gluten-free and dairy-free."

  • 2 pounds boneless, skinless chicken breast
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 2 teaspoons kosher salt
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon freshly ground black pepper
  • 5 tablespoons cooking oil, such as canola or rapeseed
  • 1 red bell pepper
  • 5 carrots
  • 1 medium yellow onion
