Freezable Chicken Enchilada Bake is a creamy and cheesy dinner recipe that the whole family will love. The filling in this recipe is made from canned cheese soup, Greek yogurt, and enchilada sauce. I always save a good freeze friendly recipe to my box when I see one. The use of cheese soup and the yogurt out a lot of the fat that you would get using a mountain of cheese, and it is still very satisfying. I make half of these spicy for my husband and I, and leave the rest mild for the kids. I make sure to top the spicy ones with a jalapeno slice before freezing so I remember which is which.
