I love Mexican dishes. I had to try this dish when I saw it. I used some minute rice for this, it only takes a few minutes in the microwave. Then I layered my casserole. This was so easy! The only thing I did differently was take out the bell peppers. The kids won't eat them, so I try to omit them whenever possible. This dish was still absolutely delicious. Also, the smell was heavenly! It filled the house, and everyone was so excited to eat this wonderful smelling food.
