Charlie's Layered Mexican Casserole is different from other Mexican casseroles because it uses salsa in the place of enchilada sauce for a unique flavor and texture. The result is an easy, zesty meal that is free from MSG. This ground beef casserole is chock-full of a variety of vegetables that pair well with Mexican spices as well as beans and plenty of cheese. This dish can even be made ahead and frozen, which means that you can prepare it during the weekend and heat it up during the week for a quick meal.

Yum! This is really nice, and you won't ever miss the enchilada sauce. I love the use of the halved cherry tomatoes, which are a nice compliment to the salsa. Speaking of the salsa, we've had a black bean and corn salsa before and plan on including some the next time we make this. I like using the combination of both corn and flour tortillas in this and I want to try some blue corn tortillas as well. Instead of the shredded mozzarella, we used some shredded Mexican cheese we had.

I've made a lot of Mexican casseroles similar to this and they are always good. Definitely adding this to my to-do list.
