Whether it's summer or winter, a Pina Colada Poke Cake makes a great dessert. It either fits the summer theme or whisks you away to a tropical island when you want to escape the cold winter. This poke cake recipe uses the classic tropical pina colada ingredients (hold the rum) and will make you feel like you're on a sunny beach in the Caribbean. Who knows, maybe you will run into a pirate.

I have to agree with msdeb21 that this sounds so good and yummy. Do you ever use maraschino cherries in your recipe? I think they would add another dimension of flavor that would go really well with this cake. It would almost be like a pineapple right side up cake.

This cake looks DELICIOUS! I love pineapple and coconut and poke cakes are wonderfully moist, so I have no doubt this will be amazing. My family doesn't like coconut so I just have to find an excuse to make this cake and take it to some family or work get-together.
