I like the idea of the cream cheese icing with this dessert, but I am wondering what it would taste like with the cream of coconut. Where do you get something like that because I have never heard of it let alone seen it in the stores? I love coconut dishes and I would like to surprise my daughter with this one because she is as much a fan as I am.

I have made this cake for years, but I put a creamcheese icing with coconut flavoring then top with the coconut. My sister-in-law gave me this recipe. I have taken to meetings along having here at home and it is usually gone in a couple of days. I am going to use the whipped topping on the next one. "Thanks for all the recipes.
