What better way to wake up than to have Blueberry Cheesecake French Toast for breakfast? This breakfast casserole recipe is ideal for holiday breakfasts and weekend brunches alike. You can whip up this casserole the night before, let it rest in the refrigerator overnight, and then pop it in the oven in the morning. Enjoying a slice of this Blueberry Cheese French Toast is sure to become one of your favorite ways to start your day. This rich and sweet French toast casserole recipe will have everyone clamoring to get out of bed.

  • 1 loaf day-old French bread, cubed
  • 1 (8-ounce) package cream cheese
  • 1/3 cup granulated sugar
  • 1 1/2 cup frozen blueberries, tossed lightly with flour (leave frozen)
  • 8 large eggs
  • 1 1/2 cup milk
  • 1 teaspoon vanilla


  1. Spray a 9 x 13 inch baking dish with nonstick cooking spray.

  2. Layer half the cubed bread in the baking dish.

  3. With a hand mixer, cream together the sugar, cream cheese, vanilla

  4. Drop by teaspoonfuls over the bread.

  5. Toss the frozen blueberries in flour.

  6. Layer the blueberries. Cover with the remaining bread.

  7. Whisk the eggs and milk until combined. Pour over the bread.

  8. Press the bread with a spatula to help soak up the milk mixture.

  9. Cover and refrigerate overnight.

  10. In the morning, preheat the oven to 350 degrees F.

  11. Bake for 45 to 50 minutes.

  12. Serve immediately.
