What a great idea! I've been quite busy lately and this seems like a quick, delicious fix to making sure there is a home cooked meal on the table.

This easy ground beef recipe is great for the little ones. It has a mild flavor and it can be broken up easily into little bites. You can easily remove the green herbs on the top for the picky eaters in your household. It also keeps well for a few days to be used as a quick and reheatable lunch!

I like easy casseroles and I like that this recipe gives you options of a quick recipe, or a more "from scratch" version. I will try the quick version first, to make for a weeknight meal. It looks like a meal my family would enjoy with a fresh loaf of bread.

I made this today and it was just okay. It's definitely a circa '60s-'70s recipe. The rice did cook in the 90 minutes which is what I always fear about putting raw rice in a casserole. If I make again, I'll probably use a topping of Parmesan cheese and no vegetables for an updated taste.
