Vintage Chicken Noodle Casserole is a creamy, wholesome chicken and pasta casserole recipe made with mushrooms, olives, and slivered almonds. It's the quintessential comfort food just like Grandma used to make. The bread crumb topping adds a nice texture that contrasts with the creamy chicken casserole underneath. This dish is rather easy to make and will be ready in an hour. If you like mushrooms and olives, then you are going to love this comforting dinner.

Serves: 6

Ingredients
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 can condensed chicken broth
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 chicken breasts, cooked and cubed
  • 1 (4-ounce) jar button mushrooms
  • 2 cups pasta, cooked
  • 1/3 cup olives, halved
  • 1/5 cup slivered almonds, divided
  • 1/2 cup bread crumbs
  • 1/2 cup shredded Cheddar cheese
  • 2 tablespoons butter, melted
Instructions
  1. Preheat oven to 400 degrees F.
  2. Melt butter in a saucepan. Add flour and blend. Gradually stir in chicken broth. Cook, stirring constantly, until smooth and thickened. Add salt and pepper.
  3. Add chicken, pasta, mushrooms, olives, and 1/2 cup almonds to sauce. Pour into a greased 1 1/2 quart casserole dish.
  4. Mix bread crumbs, cheese, and butter. Sprinkle over casserole. Sprinkle remaining almonds on top. Bake for 20 minutes, until bread crumbs are brown and cassrole is bubbling.

Just making this for dinner tonight and realized there is an error in the recipe. When making it say to mix butter and flour then add chicken broth and milk. There is no milk in the ingredients. What milk? How much milk?

You do not need to add milk to this recipe. Sorry for any inconvenience this may have caused.
