Italian rice balls, or Arancini, are an Italian appetizer made with rice, meat, and peas. Normally, they are breaded and deep fried. Rice Ball Casserole is a healthier version of that. It uses the same ingredients, but there's no frying involved. Instead, everything's mixed together and put in a casserole dish.
