Chicken is still one of the least expensive meats on the market. I am always looking for a different way to prepare it so that my family will not complain as much. This Italian chicken and rice casserole sounds really easy to make and honestly, the "chicken" will easily be lost in the mirage of all the other flavors.

It is not often we have anything left over but there are a few occasions when there is chicken leftover from a baked chicken and this is the perfect use instead of the usual chicken salad. No one would ever know that it originated from leftovers.

This is a great simple Italian style chicken casserole, since you don't even have to cook the rice first - you simply dump everything in and bake! I appreciate that this version is not swimming in a store bought tomato sauce. This stuff is filling, warming, and sure to become part of your weeknight dinner lineup.
