During this time of year, my wife and I find ourselves absolutely addicted to pumpkin pie. This is a really interesting variation on it, and I'm looking forward to giving this a try. I appreciate the idea of hiding any missteps with the strudel topping with an abundance of whipped topping. I've done much the same before with lots of whipped topping or frosting. The recipe for homemade pumpkin pie mix is definitely something I'm going to save for the future.

I have a small family of three, and many dessert recipes seem to make way too much food for us. Sometimes I catch myself eating an awful lot of the stuff just because I can't stand to throw food out! That's why I really appreciate freezer friendly recipes like this! I can wrap up individual portions and stick them in the freezer, and take them out as needed - after school snacks, or as a treat with my morning coffee!
