This Blueberry Upside Down Cake is an explosion of flavor in an easy-to-make form. You won't believe that this beautiful cake is made with just 4 ingredients! What makes this so easy is that it starts with vanilla cake mix to save you time and effort. Simply layer a little melted butter, brown sugar, and blueberries on top of the prepared cake mix and you've got a winner. This homemade cake is perfect for entertaining because it's simple and delicious. When you bring this out to your guests, they'll be so impressed with the presentation and refreshing taste.

Ingredients

  • 1 box vanilla cake mix, prepared
  • 1/2 cup melted butter
  • 1 3/4 cup packed brown sugar
  • 3 cups blueberries (fresh or frozen)

Instructions

  1. Preheat oven to 350 degrees F. Place a 9 x 13 inch baking pan onto a cookie sheet. Prepare the batter for the cake mix according to the box directions. Set aside.

  2. Cut up butter and place it in the baking pan. Place baking pan in preheated oven for 3 to 4 minutes, or until butter has melted. Remove from oven.

  3. Sprinkle melted butter with brown sugar and use a fork to evenly distribute. Pour blueberries on top of brown sugar and spread around in an even layer. Pour prepared cake batter over the blueberries.

  4. Bake for 45 to 50 minutes or until toothpick inserted in center comes out clean. Let cool 10 minutes in pan, then turn out on to large flat plate.

Wow, what a great recipe to use the juicy summer blueberries. This is such an easy recipe, and so yummy! Why don't I ever think of these things, taking a great recipe like pineapple upside down cake, and just changing the fruit? This is a wonderful dessert. I'll eat it for breakfast, too. It does have fruit in it!
