I don't often like to make casseroles in the Summer (having the oven on), but this Meyer Lemon Chicken Casserole Recipe is so bright and citrussy that it is perfect in the Summer. It is one of the few recipes where I didn't switch out the chicken breasts for thighs (personal preference), because the chicken breasts were moist and juicy and full of wonderful lemon flavor. So, whatever the weather, go ahead and make this delicious casserole, you will be glad you did.

I love a great Italian style lemon chicken, but I never thought to make it in a casserole form before! This is a great recipe, and since it uses panko as opposed to regular breadcrumbs, the coating stays on nicely. The chicken, fresh herbs, and meyer lemon give a great savory and bright flavor to the sauce / rice cooking liquid. And such a nice golden color!
