This Loaded Baked Potato and Chicken Casserole is a cheesy potato casserole that will knock your socks off. Everything that a typical loaded baked potato has (and more) is in this baked potato casserole. It has all of the things you want, including Russet potatoes, chicken breast, bacon, onions, and Cheddar cheese. This dish tastes so good that you won't believe how simple it is to make. It takes chicken and potatoes to a whole new level and you'll never want to go back to the old way of eating baked potatoes.

This is everything I love about casseroles--combining all your favorite flavors in one easy dish. It'll be a breeze to make and still be filling and yummy.

The reason it can be runny is because the chicken breasts are not cooked first. The meat juices incorporate into the recipe. Simply brown the breasts enough to release the juices in the pan then cube them for the recipe. I love to use the left-overs from a whole deli roasted chicken.
