Prepare to be "berry" obsessed with this french toast casserole recipe with brioche bread!

Berry Brioche French Toast Casserole is a homemade version of French toast casserole. Rather than using store-bought bread to make this casserole, this recipe is made with homemade brioche dough. To make this breakfast casserole, begin by making the bread dough. Then, let the bread rise for two hours before assembling the rest of this dish. Once the dough is ready, cut it into bite sized pieces and combine it with the ricotta, honey, and berries. Even if you're intimidated by the thought of making bread from scratch, this recipe is easy enough for even the novice chef.

I never thought of using ricotta cheese in a sweet dish before, but it sounds delicious, and very Italian inspired! I bet mascarpone would be good to use in this as well. The next time there are berries on sale I am going to give this casserole a try, as it looks like a very rich and decadent morning treat! I'm sure the kids will absolutely love it!

This looks incredible! I can't wait to try this out this weekend. It would also make a great Christmas morning breakfast.
