I've been swapping out ancient grains like quinoa and farro a lot lately, as they are so much more nutritious than white rice, and have a more complex flavor. This looks like a great recipe to try with quinoa! I am trying to reduce my sodium intake, so this recipe is ideal since it doesn't have any condensed soup in it. Even the reduced sodium or "heart healthy" versions of this stuff are loaded with salt.
