This Eggplant and Zucchini "Lasagna" is one of the gluten-free recipes that mimics the look and feel of pasta. This vegetable "lasagna" recipe does not contain any grains or meat. Instead, thinly-sliced eggplant and zucchini make up the layers of this delicious Italian-inspired dish. Of course, no Italian dish would be complete without the pasta sauce and two types of cheese that this casserole calls for. With just five ingredients, this meal won't take all night to prepare, but it will taste like it did.
