That is such a great tip to use pork chops for the braised pulled pork - it really saves on cooking time as compared to a shoulder roast, and you don't have the messy and tedious task of separating a lot of fat from the sauce afterwards! Plus I come from an Italian family, so I love all things pasta!

This is a confusing recipe that sounds more like pulled pork chili. But then it contains pasta! I don't think it sounds anything like an enchilada, but I still can't wait to make it. We love pulled pork , chili, pasta, and cheese, so I am sure we will like this recipe. Thanks for the creative pork recipe. I don't make much more than pulled pork because my pork recipe file is pretty slim.
