If I would have seen this recipe a few years ago, I would have thought pumpkin was a rather odd ingredient for this. However, last year I found an organic pumpkin pasta sauce in the specialty aisle of my grocery store and loved it! Since then I have even seen frozen ravioli with a pumpkin filling. It really is a great squash to use for a casserole when it is not sweetened or spiced with cinnamon!
