If you're looking for a low-carb recipe for dinner, try this Cheesy Zucchini Lasagna Bake. Instead of traditional lasagna noodles, this casserole is made with sliced zucchini, so you don't need to worry about making a vegetable side dish. A homemade ground beef pasta sauce is layered over the sliced zucchini along with ricotta cheese, parsley, and mozzarella cheese. If you're trying to incorporate more vegetables into your diet, this is a great recipe to try. No one will be able to resist a slice of this delicious zucchini lasagna!

I love to change things up a bit by substituting thinly sliced veggies for pasta. I like this recipe since you don't need any fancy peeling equipment or knife skills to get them "paper thin". 1/4" slices will do just fine. Much lower in carbs than a traditional lasagna, but still super cheesy and hearty. I will soon be making this again!

I have heard of using zucchini slices instead of traditional lasagna noodles, and I've always wanted to try it! I will have to keep this recipe in mind for my next lasagna night.
