Beefy Pumpkin Noodle Bake

- 3 tablespoons butter, divided
- 1 (12-ounce) package extra wide egg noodles
- 1 pound ground beef
- 1 yellow onion, peeled and chopped
- 1 yellow bell pepper, seeded and chopped
- 1 tablespoon dried minced garlic
- 2 tablespoons paprika
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 (15-ounce) can 100 percent pumpkin puree (not pumpkin pie filling)
- 1 (15-ounce) can diced tomatoes
- 1 cup frozen corn
- 2 cups shredded Cheddar cheese
- Fresh parsley, chopped, for garnish (optional)
Preheat oven to 350 degrees F. Grease a 9 x 13 inch baking dish with 1 tablespoon butter and set aside.
Bring large pot of salted water to a boil. Add egg noodles and cook per package instructions (about 7 to 9 minutes).
In the meantime, add ground beef to a large skillet. Cook over medium heat, breaking ground beef up with a spoon. Add onions, peppers, garlic, paprika, salt, and pepper and stir to combine.
Continue cooking beef mixture, stirring occasionally, until beef is no longer pink and vegetables are tender. Add pumpkin, tomatoes, and corn; stir to combine.
Reduce heat to simmer and continue cooking while you boil the noodles. Once the noodles are done, drain them and place them back in the pot. Add 2 tablespoons of butter and toss noodles to coat.
Add buttered noodles to prepared baking dish and spread evenly. Add beef mixture over noodles, spreading evenly over noodles. Top with cheese and place in preheated oven.
Bake for 10 to 15 minutes until cheese is melted.
