I love chicken enchiladas! These are so easy to make I'm planning to make them this week. I will have extra toppings ready lettuce, tomatoes, black olives, and more cheese. We'll have chips and salsa, guacamole, rice, and refried beans on the side. We won't have Taco Tuesday this week we'll have Enchilada Thursday!
