I love summer squash and zucchini in this quick and easy casserole recipe! I grow them both in my backyard vegetable garden, and I like to use them both at the same time for color and nutrition. As long as they are scrubbed down well, they make a great veggie base for the dish. When they are cooked, they get a nice creamy texture and blend well with the other ingredients. Great recipe!
