Hasselback Garlic Potato Casserole is an impressive, yet simple side dish recipe. Thinly sliced potatoes are arranged in a baking dish before slices of garlic and onion are nestled between the potatoes. Then, a simple butter mixture is poured over top which adds the perfect amount of savory flavor. If you're looking for an impressive side dish for Easter, this is a great recipe. With the help of a mandolin, the slicing will go by very quickly. You can also add crumbled bacon, herbs, or different types of cheese to this casserole recipe. Everyone will love this dish!

This Hasselback Garlic Potato Casserole sounds so good I can't wait to make it. I know what's for dinner tonight!! I wonder if you can just put raw bacon chunks on top and let it bake? The added bacon fat would add a great flavor to the potatoes. I also like Edmund K's idea below of using unpeeled potatoes, no need to wast the great tasting skins.. Thank you for sharing this great recipe.

I really like this recipe. Reading it made me want to crack out the mandolin, grab some potatoes, and go to town. I would definitely sprinkle some bacon on top, as well as adding some cheddar. Has anyone tried this out with unpeeled potatoes? I've always liked the natural cut fries at various restaurants and think it would work well with this.

Hasselback EVERYTHING! I love it. Can't wait to try this recipe :)

What a good idea for a casserole! I have a weakness for potato dishes, especially for the holidays, so this is going on my "yes, please" list.
