Scalloped potatoes go even further with the addition of bacon. Bacon 'N Mustard Scalloped Potatoes is an excellent potato side dish for any occasion. Bring it to a family gathering anytime of the year. It will fit right in during the holidays. This recipe from Simply Potatoes is simply amazing.

  • 3 strips bacon, cut into 1-inch pieces
  • 1 tablespoon butter or margarine
  • 3 tablespoons all-purpose flour
  • 1 3/4 cup milk
  • 2 teaspoons Dijon Mustard
  • 1/2 teaspoon salt
  • 1 package Simply Potatoes Homestyle Slices


  1. Heat oven to 350 degrees F.

  2. In a 2-quart saucepan, cook bacon over medium heat until crisp. Drain grease. Add butter; cook until melted. Stir in flour. Cook, stirring constantly, until bubbly. Slowly add milk, mustard, and salt. Continue cooking, stirring frequently, until thickened.

  3. Spray a 2 quart casserole with nonstick cooking spray. Place half of Simply Potatoes in a thin layer. Top with half of mustard sauce. Repeat layer with remaining Simply Potatoes and sauce. Cover; bake 20 minutes. Uncover, continue baking 20 to 25 minutes until potatoes are tender.

Scalloped potatoes are always a favorite around our house and this recipe is one that I'm certain to try. The addition of bacon is always a good thing and I think the dijon mustard is a great touch. I'd like to give this a try with one of the stone ground mustards I enjoy. I like that this is really quick and easy to prepare.

This one looks so good...cannot wait to try it! Review forthcoming!
