Cheesy Ham and Egg Casserole can be served at breakfast, lunch, or dinner, so it's perfect any time. Made with just four ingredients, this cheesy ham and egg breakfast casserole couldn't be any simpler to make. You'll want to make a big, juicy ham just so you can use up the leftovers in this awesome casserole. Make this easy breakfast casserole recipe for your next family brunch and you won't be sorry.

Ingredients

  • 2 cups cooked hash browns
  • 1/2 pound cooked ham, cubed
  • 3 tablespoons milk
  • 6 large eggs
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried parsley flakes (optional)

Instructions

  1. Preheat the oven to 350 degrees F. 

  2. In a large mixing bowl, add the hash browns and ham. Make sure the two ingredients are well incorporated together.

  3. Lightly beat the eggs, then add them to the hash brown and ham mixture. Add the milk.

  4. Sprinkle black pepper and dried parsley flakes into the bowl. Fold in all of the ingredients.

  5. Pour the egg mixture into a medium-sized casserole dish, then bake for 15 minutes. Let the casserole sit for 5 minutes before serving.

Yummy Cheesy Ham and Egg Casserole is the perfect Sunday morning breakfast. It is easy to prepare with just a few simple ingredients, and even easier to serve. It's ham and eggs and potatoes all mixed together in one delightfully delicious dish that is enhanced with the addition of melted cheese. Just a note, the recipe has cheese in the name, but not in the ingredient list, or directions. I had some Shredded cheese that I added to the recipe, had to guess on the amount, but it worked out. You might want to correct the recipe. Also ground black pepper is mentioned twice in the ingredients with two different amount. The idea of this recipe was so easy that I was able to overcome the "glitches".
