Whenever I make mashed potatoes to serve with a roast beef or chicken on the weekend, I usually always get out my huge spaghetti pot and make a double batch. The leftovers can be used for many different wonderful dishes like this, and you can whip them up quickly during the busy week!

Glad to see the lamb/beef comments below. Take them to heart, and try this recipe with lamb...it is delicious! I use sesame oil or another high-smoke-point oil to fry anything. Olive oil smokes/scorches at relatively low temps. I also brown the meat first and drain the fat, then add the vegs. I love how pretty the individual ramekins are!

I am an English woman now living in France and wanted to let you know that an English Shepherds' Pie is made with minced LAMB. When minced BEEF is used, the pie is called COTTAGE PIE. This name was first used at the end of the 18th century because, at that time, the poorer people of Great Britain lived in cottages in the country and potatoes were their main food. When minced beef scraps were added to the mashed potato pie it became known as "cottage pie" and the dish is still called by that name today when made with beef. It is only "shepherd's pie" when lamb is used, because a shepherd looks after sheep.

Here in Britain it is Cottage pie when made with minced beef. Shepherds pie is similar but is made with minced lamb - hence the name. Both are delicious.

I would like to try this recipe, but it will not stay on the page. It keeps diverting me to another page that never stops loading. What to do?

I think that it would be nice to print (not 5 pages long) or save these recipes.

I"m with you sister, I have found several receipts that I think I would like to try but, I don't want to waste all the paper or ink to print them. If they would let you high lite and print that would help a lot.
