Corn and Hominy Casserole is a light corn casserole recipe that can be eaten as a side dish or as a main dish. For those of you who aren't familiar with hominy, it's a food made from a corn kernel that has lost its hull and puffed up to twice its normal size. Corn and hominy are surrounded by different cheeses and black pepper for flavoring. It's the perfect dish to bring to a party or holiday gathering.
